What can we learn from the study of bread? It seems such a dull commonplace topic. But think again, bread is central to many world cultures. Greg Ziegler, associate professor of food science at Penn State, says every culture has a food that serves as the source of energy, whether it is wheat, rye, potatoes, rice, corn or maize. How does the 'bread" of a region impact its cultural development? Ziegler received Kellogg Foundation support to develop an innovative course on the subject of "bread."
